  • About Agave Tequila Joint

    Contrary to popular misconceptions, tequila is not made from cactus but rather from the agave plant, a member of the lily family. Of the many varieties of agave, only one type is permitted in the production of tequila: the agave tequilana weber or blue agave, and must be produced only in specifically designated geographic areas, primarily the state of Jalisco.

    Producing quality tequila is a labor of love. Plants are harvested after being in the fields for 8 to 12 years. The long spear shaped leaves are cut off leaving the large pineapple-like cores known as ‘pinas,’ which can range from 80 to 300 lbs. The pinas are then slow roasted or steamed, and pressed or ground to release the juice or aguamiel (honey water.) This liquid is then fermented and, at a minimum, double distilled. Mezcal, tequila’s cousin, is made from other species of agave and traditionally baked in underground ovens heated with wood charcoal which imparts the distinctive smoky taste.

  • The Tequila

    There are two fundamental types of tequila: those of 100% de agave, and mixtos which use only 51%, with sugars and water added. From these come the following classifications:

    Blanco (silver, or plata) shows the agave in its natural state from the still and is aged no longer than 60 days in metal tanks. Flavors of smoke, herb & white pepper are evident.
    Gold is an un-aged mixto silver that has been colored & flavored with caramel

    Reposado ( “rested” ) is aged from 2 mos. - 1 yr. in oak which mellows the agave flavors and contributes to a smooth finish.
    Anejo ( “aged” ) is aged in oak for 1 to 3 years. Here the herbal qualities of tequila are meshed with the mellowing characteristics of the wood, resulting in a smooth spirit with vanilla, caramel and spice flavors.

We offer ½ ounce flights or samplers of tequila by brand or across brands within classifications. Our enthusiastic staff will be happy to offer suggestions as well as their personal favorites.
